
Bircher Muesli with Summer Berries
Prep time 3 minutes – Serves 3-4
I love nothing more than a big bowl of overnight soaked oats or Bircher Muesli! A simple but super easy breakfast packed with oats, seeds, yoghurt and fruit. 2 minutes prep in the evening and you’ll have a delicious breakfast, perfect for Spring and Summer!
Ingredients
1.5 cups rolled oats
0.5 cup plain yogurt
0.5 cup milk
1 apple, grated
1 tbsp. LSA (Linseed, Sunflower Seeds and Almond)
1/2 tbsp. honey
1/2 tsp. vanilla extract
0.5 cup frozen raspberries or other summer berries
In the morning, add 1 tsp. MIP Colostrum Powder or 1 serving of MIP Day Boost and fresh berries for garnish
Directions
1 . Add all the ingredients except the frozen raspberries into a large bowl and mix well.
2. Place the frozen raspberries into a separate bowl and cover with hot water. Leave for just 1 to 2 minutes before draining. The idea is to start the defrosting process.
3. Stir the raspberries into the other bowl, combining them with the rest of the ingredients, cover the bowl (with a clear tea towel) and refrigerate overnight.
